Culinary Director at Hilton Auckland, and multi award winning New Zealand Chef, Des Harris is at the helm of our iconic harbour-side restaurant. Des is all about elevating flavour, intensity and texture of everyday ingredients, incorporating mix of modern and primal cooking techniques, and adding an abundance of freshness, acidity and touches of savoury umami characteristics.
